Jalapeño Corn Salsa

2 large cans of sweet corn (drain 3/4 of the juice)

1/2 large red onion chopped

2 jalapeños chopped finely

Juice of 1 large lime

A handful of cilantro chopped finely

Sea salt & pepper to taste


I honestly eyeball all of this and add more of whatever based on taste.


Chop onions cilantro & jalapeños

Mix in large bowl with corn

Squeeze juice of lime, mix in S&P, taste and add more accordingly

Chill for 3-4 hours before serving.

Eat with salsa chips!
